Ingredients
- Coho salmon fillet - 21.2 oz
- Olive Oil - 4 tablespoons
- Turnips - 4 pieces
- Shallot - 4 pieces
- Black Cumin (Cumin) - to taste
- Chinese green beans - 7.1 oz
- Ground Black Pepper - to taste
- Salt - to taste
- Sugar - 8 tablespoons
- Apple Cider Vinegar - 7.1 oz
- Whipped Cream - 20 fl oz
- Sweet Cream Butter - 4 tablespoons
Step by Step guide
Step 1
Divide the salmon fillet into four portions, season with salt, pepper, and a pinch of ground cumin.
Step 2
Place the pieces of fillet on a greased baking sheet, leaving some space between them. Bake in the oven for 7-9 minutes at 220°C until golden brown.
Step 3
To prepare the cider sauce, dissolve the sugar in a saucepan, add the apple cider vinegar and diced turnips. Bring to a boil until the turnips begin to soften, then remove the turnips from the saucepan.
Step 4
Add the whipped cream to the sugar and apple cider vinegar mixture and cook until the cream starts to thicken. Season with salt and pepper to taste. Just before serving, add the cooked turnip cubes to the sauce.
Step 5
Sauté the shallots lightly, being careful not to brown them. Boil the green beans in heavily salted water for 30 seconds and mix with the shallots before serving.
Step 6
Place the cooked salmon portions on a plate, arrange the shallots and green beans next to the fish, and drizzle with the sauce.
