Description
If you don't have anchovies, you can simply lightly salt the fish.
Ingredients
- Salmon - 17.6 oz
- Marinated cherries - 15 pieces
- Celery stalk - 7.1 oz
- Lemon - ½ piece
- Onion - 1 head
- Olive Oil - 0 fl oz
- Ground Black Pepper - a pinch
- Salted anchovies in oil - 0.4 oz
Step by Step guide
Step 1
Cut the salmon into pieces, drizzle with lemon juice, season with pepper, and place in a baking dish.
Step 2
Chop the vegetables: halve the cherry tomatoes, cut the celery into small pieces, and slice the onion into half-rings. Arrange them in the dish on top of and between the pieces of fish.
Step 3
Finely chop 4–5 anchovy fillets (either by cutting or mashing) and distribute them over the pieces of fish.
Step 4
Drizzle everything with olive oil.
Step 5
Place in an oven preheated to 356°F for 30–40 minutes (time may vary depending on the oven's power). If the fish starts to burn, cover the dish with foil.
Step 6
Serve on its own or alongside boiled brown rice.
