Ingredients
- Trout - 8.8 oz
- Butter - 0.4 oz
- Scallions - 0.9 oz
- Salt - to taste
- Red Long Chili Peppers - to taste
- Tarragon - to taste
Step by Step guide
Step 1
Clean the trout, cut the belly from the head to the anal opening, remove the insides, rinse, and flatten without cutting the back.
Step 2
Place the prepared fish skin-side down in a greased pan, season with salt, brush with butter, generously sprinkle with red pepper, finely chopped green onion, and tarragon, and place in the oven for 18–20 minutes.
Step 3
Serve the baked trout on a platter, garnished with tarragon sprigs and sprinkled with finely chopped green onion.
