Description
This is a very simple, albeit multi-step recipe. It can be served as a standalone dish, appetizer, or side. Ham can be replaced with bacon. Feel free to add more cheese. It is possible to prepare it without ham and cheese during fasting. The main thing is that the zucchini does not become mushy during cooking, but remains whole and slightly crispy, while being infused with vegetable juices.
Ingredients
- Courgette - 1 piece
- Potato - 1 piece
- Orange Bell Peppers - 1 piece
- Garlic - 5 cloves
- Ham - 1.8 oz
- Parmesan Cheese - 1.8 oz
- Salt - 1 teaspoon
- Vegetable Oil - 3 tablespoons
- Parsley - 3 sprigs
Step by Step guide
Step 1
Prepare the vegetables.
Step 2
Cut the zucchini in half lengthwise and score the flesh in a crosshatch pattern.
Step 3
Scoop out the center with a spoon and place the pieces in a baking dish.
Step 4
Dice the tomato.
Step 5
Place in a bowl.
Step 6
Dice the bell pepper.
Step 7
Add to the tomato.

Chop the garlic into small pieces.

Add to the vegetables.

Chop the parsley, leaving 1 sprig for garnish.

Add the parsley to the other vegetables.

Add salt.

Add vegetable oil.

Add herbs de Provence.

Stuff the zucchini halves with the vegetable mixture.

Prepare the ham and cheese.

Cover and bake for 45 minutes at 356°F.

Then remove the lid, optionally add a little more cheese, and bake until the cheese melts (about 5–7 minutes) at 356°F.

Serve the finished zucchini on plates, garnished with a sprig of greenery.
