Description

This is a very simple, albeit multi-step recipe. It can be served as a standalone dish, appetizer, or side. Ham can be replaced with bacon. Feel free to add more cheese. It is possible to prepare it without ham and cheese during fasting. The main thing is that the zucchini does not become mushy during cooking, but remains whole and slightly crispy, while being infused with vegetable juices.

Ingredients

  • Courgette - 1 piece
  • Potato - 1 piece
  • Orange Bell Peppers - 1 piece
  • Garlic - 5 cloves
  • Ham - 1.8 oz
  • Parmesan Cheese - 1.8 oz
  • Salt - 1 teaspoon
  • Vegetable Oil - 3 tablespoons
  • Parsley - 3 sprigs

Prepare the vegetables.

Cut the zucchini in half lengthwise and score the flesh in a crosshatch pattern.

Scoop out the center with a spoon and place the pieces in a baking dish.

Dice the tomato.
