Description
Balibey is one of the characters from the Turkish series "Magnificent Century." Just as impressive as this lamb burger. The recipe is created by chef John Smith from a popular burger spot.
Ingredients
- Ground coriander - 0.4 oz
- Lamb - 9.9 oz
- Eel - 1.4 oz
- Fatty Beef - 4.2 oz
- Spanish onions - 1.4 oz
- Tomatoes - 11.3 oz
- Mayonnaise - 1.4 oz
- Chipotle Pepper Paste - 0.3 oz
- Orange Bell Peppers - 1.4 oz
- Onion - 0.9 oz
- Potato - 3.5 oz
- Vegetable Oil - 10 fl oz
- Vegetable Oil - 1½ spoons
- Hamburger Bun - 4 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Foie Gras - 1.8 oz
Step by Step guide
Step 1
Pass the lamb and then the beef fat through a coarse grinder once, mix the minced meat, beat it well, and then refrigerate for half an hour.
Step 2
For the sauce, roast a medium-sized tomato and a bell pepper in the oven for fifteen to twenty minutes at 392°F. (You need 40 grams of each, but it's easier to roast them whole.) Meanwhile, sauté chopped onion in half a tablespoon of oil. Peel the tomato and pepper, then blend them with the sautéed onion.
Step 3
Grate the cheese and mix it with mayonnaise and paprika paste. Cut the potatoes into thin strips using a mandoline and fry them in hot oil.
Step 4
Shape the minced meat into patties. Fry in vegetable oil for two and a half minutes, then flip, season with salt and pepper, and place the cheese mixture on the browned side. Cook the other side for the same amount of time.
Step 5
Slice the buns in half. On the bottom halves, spread the sauce, add the lettuce leaves, and place the patties with cheese sauce. Top with rings of red onion, the remaining tomatoes, and cilantro. Cover with the other halves. Serve the potato fries separately.
