Ingredients
- Pearl barley - 1 cup
- Pork Blood - 7.1 oz
- Onion - 1 head
- Farm fresh eggs - 2 pieces
- Hard Cheese - 1.8 oz
- Ground Black Pepper - to taste
- Salt - to taste
- Clarified Butter - 2.5 oz
Step by Step guide
Step 1
Wash and finely chop the herbs.
Step 2
Peel, wash, and slice the onion into half rings.
Step 3
Rinse the pork, cut it into small pieces, season with salt, add the onion, fry in 30 g of oil, add a little water, and simmer until cooked.
Step 4
Sort the barley, rinse it, pour hot water over it, and bring to a boil.
Step 5
Then drain the water, pour the barley with 3 cups of hot salted water, add the remaining oil, mix, cover, and cook in a preheated oven until done.
Step 6
Mix the cooked porridge with the pork and herbs, and add pepper.
Step 7
Grate the cheese on a coarse grater.
Step 8
Cool the porridge, transfer it to a saucepan, pour in the beaten eggs, sprinkle with grated cheese, and place in the oven for 15 minutes.
Step 9
Serve the finished casserole on individual plates, garnished with finely chopped herbs.
