- Salt - to taste
- Barley - 1½ cups
- Olive Oil - 1 tablespoon
- Leek - 1 head
- Garlic - 1 clove
- Lemon Zest - 1 teaspoon
- Buttermilk - ½ cup
- Onion - 1 head
Step by Step guide
Step 1
In a large pot, cook the barley, seasoning the water well with salt and bringing it to a boil.
Step 2
The grain needs to cook for a sufficient time – 30-40 minutes, until it becomes very soft, then it should be drained.
Step 3
Separately, heat the oil over medium heat.
Step 4
Add the leek and 2 cups of water to the oil, seasoning with salt.
Step 5
Add the garlic and stir.
Step 6
Mix the buttermilk into the cooked barley, combining it with the lemon zest.
Step 7
The onion mixture can also be added to the grain; mix everything well.
