Ingredients
- Rabbit - 17.6 oz
- Pearl barley - 1 cup
- Vegetable Oil - 3 fl oz
- Onion - 3.5 oz
- Carrot - 10.6 oz
- Pea shoots - 3.5 oz
- Garlic - 5 cloves
- Parsley - 1 bunch
- Ground Caraway - 1 teaspoon
- Salt - to taste
Step by Step guide
Step 1
Rinse the peas and soak them for 2 hours.
Step 2
Sort the barley groats, rinse them, pour hot water over, and bring to a boil.
Step 3
Peel, wash, and cut the carrot into strips.
Step 4
Peel, wash, and slice the onion into rings.
Step 5
Rinse the rabbit meat and cut it into strips.
Step 6
Sauté the onion in a deep skillet with heated vegetable oil until golden, then add the meat.
Step 7
Fry for 10 minutes, add the carrot, and fry for another 5–7 minutes.
Step 8
Pour in 200 ml of water, add salt, and evenly distribute the peas over the surface.
Step 9
Place the peeled garlic in the center of the skillet.
Step 10
Reduce the heat to the minimum and leave for 20 minutes.
Step 11
Add the barley groats, pour in 3 cups of water, add the caraway, stir, and cook covered on very low heat for 30 minutes.
Step 12
Before serving, sprinkle with chopped parsley.
