- Chinese green beans - 8.8 oz
- Pearl barley - 0.3 cup
- Sweet Corn Sticks - 1 cup
- Arugula - 3.9 oz
- Olive Oil - ¼ cup
- Champagne Vinegar - 0.1 cup
- Shallot - 1 head
- Cumin leaves - 1 tablespoon
- Goat cheese - 2.1 oz
- Dijon Mustard - 1 teaspoon
Step by Step guide
Step 1
Cook the barley in boiling salted water for 30–40 minutes until soft. Drain and transfer to a large bowl. Cool.
Step 2
Cut the beans into small pieces and place them in boiling salted water for about 3 minutes until they are soft but still slightly crunchy. Drain and quickly transfer to ice. Cool. Pat dry and add to the barley. Add the corn kernels and mix well.
Step 3
Rinse and dry the arugula well. Transfer to the bowl with the salad and mix.
Step 4
In a small bowl, combine the olive oil, vinegar, minced shallot, cumin, and mustard. Drizzle the dressing over the salad, season with salt and pepper, and mix well. Top with goat cheese.
