Barley Salad with Mushrooms, Feta, and Walnuts
Ingredients
- Butter - 1 tablespoon
- Onion - ½ head
- Vegetable Oil - 1 tablespoon
- Garlic - 2 cloves
- Fresh Mushrooms - 8.8 oz
- Chopped Sage Leaves - 2 teaspoons
- Salt - to taste
- Ground Black Pepper - to taste
- Pearl barley - 1 cup
- Roasted Peanuts - 1.2 oz
- Feta cheese - 1.8 oz
- Olive Oil - 1 tablespoon
- Balsamic Vinegar - 2 tablespoons
Step by Step guide
Step 1
In a skillet, heat the butter and vegetable oil. Add the finely chopped onion and sauté until soft, about 5-7 minutes. Then add the minced garlic and sauté for another minute. Add the thinly sliced mushrooms, a spoonful of thyme, salt, and pepper, and sauté for 10-14 minutes until the mushrooms begin to caramelize.
Step 2
Meanwhile, cook the barley in boiling water until tender. Drain and cool.
Step 3
In a large bowl, combine the barley, mushrooms, crumbled feta, and slightly chopped walnuts.
Step 4
In a small bowl, mix the olive oil, vinegar, and a little salt and pepper. Drizzle over the salad and mix well.
Step 5
Sprinkle with thyme on top and serve.
