Barley with Feta and Basil
Ingredients
- Pearl barley - 10.6 oz
- Feta cheese - 5.3 oz
- Chicken Broth - 50 fl oz
- Garlic - 4 cloves
- Spanish onions - 1 head
- Lemon - 1 piece
- Parsley - 0.7 oz
- Olive Oil - 1 fl oz
- Basil - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cook the pearl barley in chicken broth until tender, then season with salt and pepper.
Step 2
Finely chop the onion and garlic and sauté them in butter until soft. Add the lemon juice and sauté the pearl barley with the onion and garlic.
Step 3
Finely chopped parsley leaves and coarsely chopped basil leaves are mixed with cheese and olive oil, then added to the pearl barley. Stir well and remove from heat immediately.
