Ingredients
- Macadamia Nuts - 12 pieces
- Barramundi - 28.2 oz
- Garlic - 4 cloves
- Spanish onions - 1 head
- Mild Chili Spice - 2 pieces
- Turmeric - 1 teaspoon
- Soy Sauce - 1 teaspoon
- Grated Ginger Root - 2 teaspoons
- Spinach - 1 bunch
- Coconut Milk - 4 fl oz
Step by Step guide
Step 1
Rinse the barramundi fillet or another white fish under cold running water, remove excess moisture with a paper towel, and place it on a baking sheet.
Step 2
In a blender, mix the soy sauce with finely chopped quarter of the red onion, nuts, deseeded and finely chopped chili peppers, grated ginger, and turmeric. Spread about half of the resulting mixture evenly over the fish fillet and bake for 12-15 minutes in an oven preheated to 200°C.
Step 3
Meanwhile, pour the remaining mixture into a small saucepan and add the coconut milk. Stir and heat over medium heat.
Step 4
Serve the cooked fish with boiled spinach and the coconut sauce.
