Basque Style Egg Gratin
Ingredients
- Chicken Egg - 4 pieces
- Tomatoes - 4 pieces
- Olive Oil - 2 tablespoons
- Onion - 1 head
- Red Long Chili Peppers - 1 piece
- Courgette - 2 pieces
- Garlic - 1 clove
- Gruyère cheese - 2.6 oz
- Chopped Sage Leaves - 2 teaspoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a heavy-bottomed skillet, sauté finely chopped onion and diced pepper in olive oil. Add thinly sliced zucchini and fry them on both sides. Add peeled and finely chopped tomatoes, minced garlic, season with salt and pepper, and cook for 1 minute.
Step 2
Transfer the mixture into two buttered baking dishes, spreading it evenly across the bottom. Make two indentations in each dish and crack the eggs into them. Sprinkle with grated cheese.
Step 3
Place the dishes under a preheated grill and cook for 10–15 minutes. Generously sprinkle with parsley.
