- Cilantro - ¼ cup
- Salad Potatoes - 2 lbs
- Olive Oil - 4 tablespoons
- Salt - 1½ tablespoons
- Garlic - 5 cloves
- Meyer Lemon Juice - 1 tablespoon
- Cayenne Pepper - ¼ teaspoon

Preheat the oven to 392°F.
Step 2
In a large bowl, mix the potatoes with two tablespoons of olive oil and salt. Spread the potatoes across two baking sheets lined with parchment paper. Place the sheets in the oven and bake for 40 minutes until golden brown, stirring once.
Step 3
Place a large skillet over medium-high heat. Add the remaining two tablespoons of oil, garlic, and cilantro. Sauté for 1–2 minutes until the garlic changes color. Add lemon juice and potatoes, and stir gently. Season to taste and sprinkle with cayenne pepper.
Step 4
Serve immediately as a side dish or appetizer.
