  • Canned Baby Beets - 14.1 oz
  • Spinach - 15.9 oz
  • Chopped Sage Leaves - to taste
  • Dijon Mustard - ½ teaspoon
  • Onion - to taste

Step 1

In a bowl, mix the oil, lemon juice, mustard, and season with salt and pepper. Add the beans.

Step 2

Boil water and add the spinach, cooking for 2–4 minutes. Transfer the wilted spinach to the beans. Add parsley, onion, and lemon zest. Mix well.
