Bean Patties with Nuts and Seeds

Ingredients

  • Chopped almonds - 2.3 oz
  • Toasted Sesame - ¼ cup
  • Sunflower Seeds - ¼ cup
  • Ground Oats - ¼ cup
  • Garlic - 2 cloves
  • Carrot - 1 piece
  • Tahini - 1 tablespoon
  • White Beans - 10.6 oz
  • Ground Cumin - ½ teaspoon
  • Ground coriander - ½ teaspoon
  • Soy Sauce - 3 tablespoons
  • Lime Juice - 1 tablespoon
  • Raisins - 1 tablespoon
  • Flaxseeds - 1 tablespoon

Step by Step guide

Step 1

Add flax seeds to a small bowl and cover with water. Set aside.

Step 2

Toast sesame seeds and chopped almonds in a skillet over medium heat, stirring constantly. Remove from heat as soon as they turn brown and become more aromatic. Set aside to cool.

Step 3

In a blender, grind oats and sunflower seeds into fine crumbs.

Step 4

Add toasted nuts, garlic (minced), grated carrot, and blend until smooth.

Step 5

Drain the water from the flax mixture and add the seeds to the blender, along with the beans and the remaining ingredients. Blend, but not to a smooth consistency. The pieces of beans should be fairly large. Season to taste.

Step 6

Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for at least 1 hour, preferably 6-8 hours. The longer the mixture sits in the fridge, the easier it will be to work with later.

Step 7

Once the mixture has rested, preheat the oven to 374°F (375 degrees Fahrenheit) and lightly grease a baking sheet. Place the baking sheet in the oven for 15 minutes. Remove the mixture from the fridge, divide it into equal parts, and form patties. Place the patties on the hot baking sheet, gently press each with a spatula, then drizzle with olive oil and bake for 8 minutes. After 8 minutes, carefully flip the patties, press down again with the spatula, and bake for another 8 minutes.

Step 8

The patties will be ready when the crust on both sides looks crispy and brown. Allow them to cool slightly before serving.

Step 9

Serve with avocado and cilantro, salad leaves, or as a burger with your favorite bun!
