- Paprika - 1 teaspoon
- Wheat Flour - 1 tablespoon
- Olive Oil - 4 tablespoons
- Chorizo - 1 piece
- Onion - 2 pieces
- Bay leaf - 1 piece
- Garlic - ½ head
- Beans - 23.8 oz
Step by Step guide
Step 1
Soak the beans in cold water overnight or for at least 3 hours. Then rinse under cold water. Place in a pot, cover with water, cover with a lid, bring to a boil, remove the pot from the heat, and drain the water. Replace it with cold water to cover all the beans. Add the bay leaf, one onion, chorizo, and garlic – the garlic should be pierced in several places with a fork and roasted over the fire or in foil on the grill.
Step 2
Cook everything together for about 30 minutes over medium heat. Add 250 ml of cold water, bring to a boil again, and cook for another 30 minutes. Repeat this process two more times. The total cooking time is 2 ½ hours.
Step 3
Chop the remaining onion. Heat the oil in a skillet, add the onion, and cook over medium heat, stirring, for 10 minutes until the onion starts to brown. Add the flour and cook for another 10 minutes. Stir in the paprika and 3-4 tablespoons of the liquid from the beans. Remove the skillet from the heat and let it cool slightly, then blend and add the resulting puree to the pot with the beans. Season with salt to taste.
Step 4
Remove the chorizo from the pot – slice it and return it to the pot. Remove the bay leaf. Pour everything into a soup tureen and serve immediately.
