Beans in Sauce
Ingredients
- Chinese green beans - 4 lbs
- Olive Oil - 6 tablespoons
- Activated Baking Soda - ¼ teaspoon
- Onion - 1 head
- Wheat Flour - 2 tablespoons
- Serrano Chili - 3.5 oz
- Dry White Wine - 6 fl oz
- Salt - to taste
Step by Step guide
Step 1
Cut the pods into squares, rinse, and dry.
Step 2
Bring a large pot of salted water to a boil, add the beans with a pinch of baking soda, and cook uncovered for 35 minutes until they are soft.
Step 3
Heat the oil in a pan, add the finely chopped onion, and cook over low heat, stirring, for 6 minutes until the onion is soft. Add the finely chopped ham and fry for another 2-3 minutes. Then pour in the wine.
Step 4
Drain the water from the beans, saving it. Transfer the sauce from the pan to the pot and add the beans. Mix well and pour in enough of the liquid in which the beans were cooked to cover all the contents of the pot. Cook uncovered for another 10 minutes.
