Ingredients
- White Beans - 8.8 oz
- Pork fat - 0.9 oz
- White Cabbage - 2 lbs
- Salt - to taste
- Bay leaf - 1 piece
- Onion - ½ head
- Garlic - 2 cloves
- Ham - 4.2 oz
- Bacon - 4.2 oz
- Salad Potatoes - 17.6 oz
Step by Step guide
Step 1
Rinse the beans and place them in a large pot along with the bay leaf, garlic, fat, ham, bacon, and 1 liter of cold water. Bring to a boil, then reduce the heat and cook for 15 minutes. Add 250 ml of cold water, bring to a boil again, and cook for another 15 minutes. Repeat this process three times: the total cooking time should be 1 hour and 15 minutes.
Step 2
While the beans are cooking, slice the cabbage into strips and dice the potatoes.
Step 3
Using a slotted spoon, remove the beans from the pot. Set half aside in a bowl with a small amount of broth, and puree the other half in a blender until smooth.
Step 4
Return the puree to the pot, add 1 liter of warm water, and when the mixture is ready to boil again, add the cabbage. Continue to cook for 1 hour, then add the potatoes and salt. Cook for another 45 minutes until the potatoes and cabbage are tender. Now add the reserved beans.
Step 5
Remove the pieces of ham and bacon, cut them into cubes, and return them to the pot. Add the chopped garlic as well. Taste and add spices if necessary. Serve hot in a soup tureen.
