Ingredients
- Salt - to taste
- Red Grape Juice - 10 fl oz
- Wheat Flour - 1 tablespoon
- Garlic - 2 cloves
- Onion - 1 piece
- Olive Oil - 5 tablespoons
- Beef Shank - 1 piece
- Clove - 2 pieces
- Bacon - 5.3 oz
- Beans - 17.6 oz
Step by Step guide
Step 1
Soak the beans in cold water overnight or for at least 3 hours. Then rinse under cold water. Place in a pot, cover with water, and bring to a boil over low heat. Remove the pot from heat and drain the water. Put the beans in a clean pot, add cold water to cover all the beans. Add the clove, shank, and bacon, bring to a boil, then reduce the heat and simmer for 1½ hours until the beans are soft.
Step 2
Heat the olive oil in a pan, add finely chopped onion and garlic, and sauté over low heat, stirring, for 10 minutes until the onion begins to darken. Stir in the flour and cook, stirring, for 2-3 minutes, then add the wine. Mix well.
Step 3
Pour the contents of the pan into the pot with the beans, stir, and cook for another 30 minutes. Season with salt to taste. Remove the bacon, chop it into small pieces, and return it to the pot. Remove the shank and clove. Serve in a warmed dish.
