Beans with Tomatoes and Bell Peppers
Ingredients
- White Beans - 2 cups
- Orange Bell Peppers - 1 piece
- Tomatoes - 2 pieces
- Onion - 1 head
- Carrot - 1 piece
- Sour Cream - 2 tablespoons
- Mustard Greens - 2 teaspoons
- Salt - to taste
- Ground Black Pepper - to taste
- Mushroom seasoning - to taste
- Garlic - 1 clove
- Butter - 0.4 oz
Step by Step guide
Step 1
Soak the beans overnight (8 hours) to absorb liquid and soften. Use 4 cups of water for 2 cups of beans. Then drain the remaining water. Cook the beans: cover the beans with water, add salt, and cook over medium heat for 40 minutes to 1 hour until tender.
Step 2
Chop the onion and carrot, and heat them in a pot with butter for flavor. Stir.
Step 3
Peel the tomatoes. To do this, immerse the tomatoes in boiling water for 30 seconds until the skin starts to come off. Then remove the tomatoes from the boiling water, peel them, and add to the pot with the carrot and onion. Stir.
Step 4
Remove the seeds from the bell pepper, chop it, and add it to the pot with the other vegetables. Stir.
Step 5
Add garlic; salt and ground pepper to taste.
Step 6
Add the beans.
Step 7
Add two tablespoons of fresh sour cream and two teaspoons of mustard. Stir.
Step 8
Simmer for about 15 minutes.
