Beef chuck stewed in Guinness beer
Ingredients
- Guinness Beer - 17 fl oz
- Beef chuck roast - 2 lbs
- Onion - 1 piece
- Garlic - 1 head
- Carrot - 1 piece
- Olive Oil - 2 tablespoons
- Wheat Flour - 2 tablespoons
- Thyme - 10 sprigs
- Bay leaf - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Cilantro - 1 bunch
Step by Step guide
Step 1
Cut the meat into cubes, then coat it in a mixture of flour, salt, and pepper.
Step 2
Heat butter and vegetable oil in a saucepan and sauté the meat for 2–3 minutes until browned. Then place it on a plate. In the same saucepan, add the sliced onion and crushed garlic cloves, and sauté for 5 minutes, stirring. Once the onion turns golden, add the diced carrot. Sauté for another 3–4 minutes.
Step 3
Add the meat to the vegetables and pour in the beer. Bring to a boil. Cover the saucepan with a lid and reduce the heat to low for 40 minutes, stirring occasionally. If the liquid in the saucepan becomes too thick, you can add a little water.
Step 4
Add the bay leaf and thyme leaves (do not add thyme as whole sprigs). Simmer for another 30 minutes.
Step 5
When the meat is ready, sprinkle it with cilantro leaves, ground pepper, and serve with mashed potatoes and fresh vegetables.
