Description
This is an example of so-called low-temperature cooking. Meat cooked in an oven preheated to less than one hundred degrees has an exceptionally tender texture.

- Garlic - 4 cloves
- Ginger - 1.8 oz
- Balsamic Vinegar - 1 fl oz
- Veal Fillet - 21.2 oz
- Cilantro - 1.8 oz
- Vegetable Oil - 0 fl oz
- Ground Cinnamon - a pinch
- Raw cane sugar - 1.8 oz
- Clove - 3 pieces
- Green peppercorns - 5 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Apple - 17.6 oz
Step by Step guide
Step 1
Heat a skillet, splash some vegetable oil into it, and sear the veal fillet on all sides. Sear just a little — about fifteen seconds on each side.
Step 2
Transfer the veal to a roasting bag (available in supermarkets). In the same bag, add the coarsely chopped garlic, chopped cilantro, onion sliced into half rings (50 g), balsamic vinegar (20 ml), finely chopped ginger (20 g), salt, and whole peppercorns. Season the contents of the bag with salt and freshly ground pepper. Securely seal the bag. You can simply tie it in a knot.
Step 3
Heat water in a pot to a temperature between sixty to eighty degrees Celsius. By the way, at this temperature, the Chinese recommend brewing oolong teas. Meanwhile, preheat the oven to the same temperature. If your oven doesn't have a thermometer, which is quite common, set the temperature control to the lowest setting. Place the bag with the veal into the pot of water. This is where the sealing density is important: the bag must not allow water to seep in. Cover the pot with a lid and leave it in the oven for forty minutes.
Step 4
At the same time, prepare the apple chutney. Slice firm green apples and sauté them in vegetable oil over low heat for twenty minutes, along with finely chopped ginger (30 g), sugar, finely chopped onion (100 g), cinnamon, ground pepper, balsamic vinegar (30 ml), and cloves. The preparation of this quick chutney takes 25 minutes.
Step 5
Remove the cooked veal from the package, slice it into neat pieces, sprinkle with freshly ground pepper, arrange on plates, and serve with apple chutney.
