- Salt - to taste
- Lamb Neck Fillet - 6 pieces
- Butter - 3.2 oz
- Brandy - 2 fl oz
- Mustard Greens - 0.5 oz
- Blue Cheese - 3.2 oz
- Chopped Sage Leaves - to taste
- Cream - 1 fl oz
Step by Step guide
Step 1
Lightly sprinkle salt on the bottom of a large skillet. Heat the skillet and cook the meat to your liking. In the skillet, melt the butter, then slowly pour in the brandy and ignite it. Once the flames subside, transfer the meat from the skillet and keep warm.
Step 2
Add the mustard to the skillet and mix well. Heat and cook for a few seconds, stirring. Add the cheese, broken into small pieces, and mix well. Then pour in the cream and stir.
Step 3
Place the meat on plates and drizzle with the hot sauce. Sprinkle with parsley on top.
