Ingredients
- Carrot - 1 piece
- Kiwi - 2 pieces
- Mustard Greens - 2.5 oz
- Fresh Rose Hips - 3 sprigs
- Garlic - 2 cloves
- Salt - to taste
- Ground Black Pepper - to taste
- Veal Tenderloin - 1 piece
Step by Step guide
Step 1
Rinse the beef well in cold water. Then, make crosswise cuts with a sharp knife.
Step 2
Make a marinade from the peeled and mashed kiwi, mustard, salt, pepper, and garlic.
Step 3
Place thinly sliced rounds of carrot into the cuts.
Step 4
Rub the marinade onto the beef. Place it in a regular bag and wrap it with rosemary sprigs from all sides.
Step 5
Leave to marinate for a day in the refrigerator.
Step 6
Bake in a preheated oven at 356°F, in a sleeve (do not pierce), on a baking sheet for 1–1.5 hours (depending on the meat). When done, do not remove it immediately, or the bag will burst.
