Ingredients
- Honey - 1 tablespoon
- Malt Vinegar - 3 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - ¼ cup
- Garlic - 2 cloves
- Spanish onions - ½ head
- Olives stuffed with lemon - 2.5 oz
- Oranges - 1 piece
- Parsley - 0.7 oz
- Lamb Neck Fillet - 24.7 oz
Step by Step guide
Step 1
Finely chop the onion, and slice the green olives into rounds. Peel the orange, cut it into segments, and then cut the segments into small cubes.
Step 2
Whisk together the honey and vinegar in a bowl, seasoning with salt and pepper. While whisking, slowly pour in the oil. Add the onion, press in the garlic, and add the olives, oranges, and chopped parsley; set aside.
Step 3
Season the beef fillet with salt and pepper and sear in vegetable oil in a hot skillet. Transfer to a plate, cover with foil, and let rest for 10 minutes before slicing.
Step 4
Before serving, slice the fillet into pieces and arrange on a platter. Drizzle with the sauce and garnish with parsley sprigs.
