Description
You can also prepare pork kidneys in the same way, but they are sliced raw without prior boiling and then fried.
Ingredients
- Beef Kidneys - 17.6 oz
- Salad Potatoes - 21.2 oz
- Onion - 1 head
- Pickles - 3 pieces
- Wheat Flour - 1 tablespoon
- Bay leaf - 2 pieces
- Vegetable Oil - 2 tablespoons
- Green peppercorns - 8 pieces
- Herbs - 1 bunch
Step by Step guide
Step 1
Clean the kidneys from fat and membranes, place them in a pot, cover with cold water, and bring to a boil.
Step 2
After that, drain the water, rinse the kidneys, cover them with fresh water, and cook until done (about 1 to 1.5 hours).
Step 3
Using the broth obtained from boiling the kidneys, prepare the sauce. For this, fry one tablespoon of flour with the same amount of oil until dark brown, dilute with 1.5 cups of hot broth, and simmer on low heat for 5–10 minutes.
Step 4
Slice the cooked kidneys into small pieces, mix with finely chopped and fried onion, and sauté together for 2–3 minutes.
Step 5
Then transfer the kidneys to a shallow pot, add the sliced fried potatoes, peeled and sliced pickles, bay leaves, and peppercorns (or 1/10 of a pod), pour in the prepared strained sauce, cover with a lid, and simmer for 25–30 minutes.
Step 6
When serving, transfer the kidneys along with the garnish to a warmed dish and sprinkle with finely chopped parsley or dill.
