Beef Madras Curry with Potatoes
Ingredients
- Onion - 2 heads
- Vegetable Oil - 1 tablespoon
- Garlic - 3 cloves
- Grated Ginger Root - 1 tablespoon
- Tamarind Paste - 4 tablespoons
- Beef - 2 lbs
- Campbell's Beef Broth - 8 fl oz
- New Potatoes - 6 pieces
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Heat the oil in a large ovenproof pot and sauté the finely chopped onion over medium heat for 4-5 minutes. Add the garlic and ginger, stir, and simmer for 5 minutes.
Step 3
Add the curry paste and simmer for another 2 minutes. Increase the heat and add the meat, cut into small cubes. Sauté for 2-3 minutes, stirring constantly. Add the broth and mix well.
Step 4
Cover with a lid and place in the oven for 50 minutes, stirring 2-3 times during this time. If necessary, add a little water. Reduce the temperature to 320°F and add the unpeeled chopped potatoes, cooking for 30-40 minutes.
Step 5
Serve immediately with jasmine rice.
