Description

In this recipe, a Tefal Optigrill and its baking accessory are used for preparation.

  • Eggplants - 3 pieces
  • Olive Oil - 5 fl oz
  • Spanish onions - 1 head
  • Lean Beef - 15 oz
  • Garlic - 2 cloves
  • Canned Tomatoes (Pelati) - 15 oz
  • Passata Tomato Sauce - 0 oz
  • Sugar - 1 tablespoon
  • Red Grape Juice - 5 fl oz
  • Bay leaf - 1 piece
  • Ground Cinnamon - a pinch
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Milk - 20 fl oz
  • Butter - 5 oz
  • Wheat Flour - 5 oz
  • Whole egg - 2 pieces
  • Nutmeg - to taste
  • Parmesan Cheese - 0 oz

Step by Step guide

Slice the eggplants into rounds about 1 cm thick. Brush them with olive oil. Turn on the Optigrill and select the orange temperature setting in manual mode. Grill the eggplants for 5 minutes, until they are a beautiful golden-brown color.

Install the baking accessory in the Optigrill, set the manual mode to the red temperature level. Sauté the chopped onion in olive oil until golden brown, then add the minced garlic, tomato paste, and ground meat, mixing well. Pour in the wine and cook, stirring, for a couple of minutes.

Add canned tomatoes, cinnamon, bay leaf, salt, and pepper. Cover and cook for 7 minutes. For the béchamel sauce, melt butter in a saucepan over low heat, add flour, and stir. Gradually pour in warm milk while constantly whisking to prevent lumps from forming. Continue to stir the sauce until it thickens, then remove it from the heat, whisk in the egg yolks, season with salt and pepper, and add nutmeg.

In a clean baking dish, layer the eggplant, then add the meat sauce, removing the bay leaf beforehand. Cover it with more eggplant, then top with béchamel sauce and sprinkle with grated cheese. Set the manual mode to the orange temperature level and cook for 20 minutes.
