Ingredients
- Beef Shank - 19.4 oz
- Rosé Dry Wine - 25 fl oz
- Bread Kvass - 7 fl oz
- Onion - 2.1 oz
- Carrot - 1.1 oz
- Salt - 0.1 oz
- Ground Black Pepper - 0 oz
- Herbes de Provence - 0 oz
- Passata Tomato Sauce - 2.5 oz
Step by Step guide
Step 1
Season the osso buco with salt and pepper, sear on both sides, and place on a tray.
Step 2
Add thyme, garlic, kvass, tomato paste (or canned tomatoes), red wine, salt, and pepper. Cover with foil and place in the oven at 180°C for 3 hours until tender. Check every hour.
Step 3
Remove from the oven. Strain the sauce from the meat through a fine sieve, reduce slightly, and drizzle over the osso buco when serving.
