Ingredients
- Veal Tenderloin - 21.2 oz
- Pork fat - 7.1 oz
- Goat cheese - 2.1 oz
- Butter - 0.7 oz
- Olive Oil - 1 tablespoon
- Ground Black Pepper - to taste
- Ocean salt - to taste
Step by Step guide
Step 1
Pass the meat and pork fat through a meat grinder.
Step 2
Season the resulting minced meat with salt.
Step 3
Then add pepper and mix well.
Step 4
Form patties from the minced meat and make a dent in the center for the cheese.
Step 5
Place gorgonzola on top (10 grams for each portion).
Step 6
Shape into patties.
Step 7
Heat olive oil and butter in a skillet.
Step 8
Add the patties to the oil.
Step 9
Once the bottom side is browned, flip and reduce the heat.
Step 10
Cover with a lid.
Step 11
After 8–10 minutes, transfer to a plate and serve.
