Description
You can add spinach to this filling. For this, clean the spinach from tough parts, rinse it, and boil it in salted water for about 10 minutes. Then drain the water, squeeze it in a colander until the spinach is dry. Finely chop the leaves and sauté them with the onion and beef, then blend the mixture. For the amount of filling described in the recipe, you will need 300 grams of spinach.

- Chicken Egg - 1 piece
- Parmesan Cheese - 1.8 oz
- Beef - 5.3 oz
- Leek - 2 pieces
- Olive Oil - 3 tablespoons
Step by Step guide
Step 1
Cut the leek lengthwise, then chop it into pieces about 2.5 cm long. Cut the beef into cubes and grate the cheese.
Step 2
Heat the oil in a pan, add the leek, and cook over low heat, stirring, for 10 minutes. Add the beef, cover, and cook for another 15-20 minutes. Blend the contents of the pan, but don't overdo it: you should get a crumbly mixture, not a puree.
Step 3
Place the mixture in a bowl along with the breadcrumbs, cheese, lightly beaten egg, sherry, and a pinch of salt. Mix well. Allow the mixture to cool completely before using it to fill the ravioli.
