Ingredients
- Olive Oil - 2½ tablespoons
- Thick Beef Rib - 1½ kg
- Ground Black Pepper - to taste
- Salt - to taste
- Onion - 1 head
- Turnips - 2 pieces
- Celery salt - 1 bunch
- Garlic - 2 cloves
- Red Grape Juice - 1¾ cups
- Campbell's Beef Broth - 1 cup
- Worcestershire Sauce - 1½ tablespoons
- Soy Sauce - 1½ teaspoons
- Thyme - 7 sprigs
- Bay leaf - 2 pieces
- Butter - 4½ tablespoons
- Spanish onions - 1 head
- Dijon Mustard - ¼ cup
- Sour Cream - 2 tablespoons
- Rye Bread - 8 slices
- Aged gouda cheese - 8 slices
Step by Step guide
Step 1
Prepare the ribs. Preheat the oven to 302°F.
Step 2
Place a pot over medium heat and add the oil. Rub the ribs with salt and pepper. Sear them. Transfer to a plate. In the same oil, sauté the onion, roughly chopped carrots, chopped celery, and crushed garlic. Sauté for about 5 minutes until the vegetables are soft.
Step 3
Return the seared ribs to the pot and pour in the wine. Bring to a boil, reduce the heat, and simmer for about 3 minutes. Then add the broth, Worcestershire sauce, soy sauce, thyme, and bay leaves. Season with salt and pepper. Continue to simmer on low heat. Cover and place in the preheated oven. Bake for about 3 hours. If the liquid evaporates, add water while the pot is in the oven.
Step 4
Remove the cooked ribs and place them on a plate. Strain the sauce, removing the solid ingredients. Skim the fat off the sauce. Cut the meat off the bones and slice it. Season with salt and pepper. Add the sliced meat to the sauce and mix.
Step 5
Prepare the onions. In a large skillet, heat the butter and olive oil. Add the onion and thyme. Cover and sauté, stirring, until the onion becomes translucent. Remove the lid, add sugar, salt, and pepper. Increase the heat and cook, stirring frequently, gradually adding 1 tablespoon of water if the onion starts to burn. Sauté until the onion is brown and remove the thyme sprigs.
Step 6
Prepare the sauce. Mix the mustard and sour cream in a small bowl.
Step 7
Prepare the sandwiches. Spread butter on one side of the bread slices and mustard sauce on the other. Toast the slices of bread, mustard side up. On the bread, place a slice of cheese, then the caramelized onion, sliced meat, and cheese. Top with another slice of bread, butter side up.
Step 8
Toast the sandwiches until the cheese melts and the filling is heated through. Serve hot. Enjoy your meal!
