Ingredients
- Beef - 12 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Mustard Greens - ½ cup
- Bacon - 6 pieces
- Pickles - 3 pieces
- Onion - 1 head
- Butter - 5 tablespoons
- Garlic - 3 cloves
- Carrot - 1 piece
- Celery salt - 1 piece
- Red Grape Juice - 1 cup
- Lean Beef - 17.6 oz
- Bay leaf - 1 piece
- Wheat Flour - 3 tablespoons
- Parsley - 1.4 oz
- Salad Potatoes - 2 lbs
- Sauerkraut - 3.5 oz
Step by Step guide
Step 1
Season the pieces of beef with salt and pepper. Slice the onion into thin rings, cut the pickles into quarters, and halve the bacon slices. Spread mustard on each piece of beef, place 1 piece of bacon, a pickle, and onion on top. Roll them up and secure with a toothpick.
Step 2
In a deep skillet, melt 2 tablespoons of butter over medium heat. Fry the rolls in small batches until browned on all sides. Transfer to a plate.
Step 3
In the same oil, sauté the remaining onion, minced garlic, finely chopped carrot, and celery, then pour in the wine and cook for 1-2 minutes until it evaporates. Add the broth and bay leaf. Place the rolls in the skillet and simmer on low heat for about an hour.
Step 4
Transfer the cooked rolls to a plate and remove the toothpicks. Pour the broth into a bowl. In the skillet, add the remaining butter, melt it over medium heat, and stir in the flour. Cook, stirring, for about 2 minutes. Then pour in the broth and whisk until thickened. Drizzle the finished rolls with the resulting sauce. Sprinkle with parsley and serve with potatoes and sauerkraut.
