- Potato - 1 piece
- Sour Cream - 1.1 oz
- Foie Gras - 1.6 oz
- Truffle Oil - 1 tablespoon
- Veal Tenderloin - 7.1 oz
- Butter - 0.7 oz
- Vegetable Oil - 1 tablespoon
- Garlic - to taste
- Thyme - to taste
- Dill - to taste
- Wheat Flour - 0.7 oz
- Red Grape Juice - 1 fl oz
- Campbell's Beef Broth - 17 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a cast-iron skillet, sear the beef, seasoning it with salt and pepper. In another cast-iron skillet, sear the foie gras.
Step 2
Place the potatoes on foil with garlic, thyme, and vegetable oil, wrap it up, and put it in the oven at 356°F for fifteen to twenty minutes. Place the seared foie gras in a pan in the oven preheated to 356°F for three to five minutes.
Step 3
Place the seared tenderloin in the oven for ten to twelve minutes at 356°F, adding garlic and thyme. After five minutes, open the oven and place a piece of butter on the meat. Then, use a spoon to collect all the juices that have formed in the skillet and pour them over the meat. Repeat this several times until the meat reaches the desired level of doneness.
Step 4
In parallel, prepare the sauce. Sauté all the meat trimmings with garlic and thyme. Add 30 ml of semi-dry or semi-sweet red wine. Sprinkle in 20 g of flour and sauté well. Pour in half a liter of beef broth (or water) and reduce until thickened. Strain.
Step 5
Once all components of the dish are ready, arrange the meat on a plate and place the foie gras on top. Next to it, add a baked potato and a spoonful of sour cream. Drizzle the meat with sauce and finish by sprinkling with truffle oil.
