Description
Kiwi contains a protein enzyme called actinidin, which can break down animal protein. Therefore, the meat quickly absorbs the marinade, and it should not be marinated for more than two hours.

- Beef Cheeks - 2 lbs
- Kiwi - 1 piece
- Onion - 10.6 oz
- Salt - 0.2 oz
- Ground Black Pepper - 0.1 oz
- Olive Oil - 1 fl oz
- Garlic - 2 cloves
Step by Step guide
Step 1
Rinse the meat under running water and cut it into cubes of about 3-5 cm. Transfer the meat to a deep bowl.
Step 2
Take 100 g of onion, peel it, and chop it coarsely. Peel the kiwi. Blend the onion and kiwi together. Slice the remaining onion into rings.
Step 3
Grate the garlic cloves on a fine grater and add them to the chopped meat. Also, add the onion and kiwi mixture, ground pepper, salt, and olive oil. Mix thoroughly.
Step 4
Place the meat in the refrigerator to marinate.
Step 5
Grill the marinated meat over hot coals, skewering it or placing it on a grill rack.
