Beef Stew with Dried Fruits

Ingredients

  • Olive Oil - ½ cup
  • Veal Tenderloin - 2 lbs
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Garlic - 6 cloves
  • Turnips - 2 pieces
  • Celery stalk - 2 stalks
  • Onion - 2 heads
  • Parsnip - 1 piece
  • Red Grape Juice - 1 cup
  • Campbell's Beef Broth - 1 cup
  • Dried Apricots - 3.5 oz
  • Pitted Wild Apricots - 3.5 oz
  • Raisins - 3.5 oz
  • Parsley - 1 bunch
  • Cilantro - 0.7 oz
  • Chopped Sage Leaves - 0.7 oz
  • Nutmeg - 0.2 teaspoons
  • Cayenne Pepper - 1 teaspoon
  • Grated Ginger Root - 1 teaspoon
  • Chopped Sage Leaves - 6 pieces
  • Oranges - 2 pieces
  • Salad Potatoes - 2 pieces
  • Turnips - 1 piece
  • Kohlrabi - 1 piece
  • Courgette - 1 piece

Step by Step guide

Step 1

Heat the olive oil over high heat in a large pot. Cut the beef into cubes, season with salt and pepper. Sear the beef pieces for 5-7 minutes, then transfer to a plate.

Step 2

Crush the garlic cloves with the flat side of a knife, peel and chop the carrots and parsnip, and chop the celery and onion. Cook the vegetables in the same pot for 5-7 minutes until they become soft. Pour in the wine and cook over medium heat until half of the liquid evaporates.

Step 3

Cut the dried apricots into quarters and halve the prunes. Add the beef along with the broth, prunes, dried apricots, raisins, parsley, cilantro, oregano, nutmeg, cayenne pepper, ginger, sage, and oranges to the pot. Bring to a boil, then simmer on low heat for 1.5-2 hours.

Step 4

Peel and coarsely chop the remaining vegetables. Add them to the stew and simmer on low heat for another hour.
