- Veal Tenderloin - 14.1 oz
- Parsley - 0 oz
- Gherkins - 0.4 oz
- Spanish onions - 0.4 oz
- Whole egg - 4 pieces
- Vegetable Oil - 1 fl oz
- Ketchup - 1.8 oz
- TABASCO® - 0 fl oz
- Worcestershire Sauce - 0 fl oz
- Ground Black Pepper - to taste
- Salt - to taste
- Chervil - to taste
Step by Step guide
Step 1
Prepare the tartar sauce: in a bowl, mix together vegetable oil, ketchup, Tabasco, and Worcestershire sauce.
Step 2
Dice the beef, gherkins, and red onion into small cubes. Finely chop the parsley as well. Combine everything, add the sauce, and let it marinate at room temperature for 2–3 minutes. Then season with salt and pepper to taste.
Step 3
Spoon the tartare onto a plate. Make a small indentation and place the yolk on top. Season the yolk with black pepper and salt. Garnish with chervil.
Step 4
Serve with toasted bread, lightly dried in the oven.
