Description
Classic Mexican fajitas with beef require marinating the meat in advance, but since there isn't always two to three days for proper marination, here is a quicker (but equally quality) recipe. This recipe was shared with me by a neighbor, a Mexican chef. In the restaurant, he marinates the beef and prepares fajitas according to the orthodox recipe, but at home, he cooks exactly by this recipe. I had the opportunity to compare — I noticed no differences :) As a drink, I recommend a good dry red wine, Mexican beer 'Corona', or Mexican tequila.
Ingredients
- Tortillas - 6 pieces
- Sweet Red Onion - 3 pieces
- Orange Bell Peppers - 4 pieces
- Veal Tenderloin - 17.6 oz
- Green peppercorns - 5 pieces
- Bay leaf - 4 pieces
- Ground ancho chili pepper - 2 pieces
Step by Step guide
Step 1
Rinse the beef tenderloin well, removing any membranes and excess. Cut into thick steaks. Generously salt and sprinkle with ground black pepper, then massage the salt and pepper into the meat. Place the meat in a pot of boiling water with allspice and black peppercorns and boil on high heat for 15–20 minutes.
Step 2
Then either drain the broth or use it for soup. Let the meat rest and cool at room temperature. When the meat cools to a temperature that won't burn your hands, cut it into strips 8–10 cm long and 1 cm wide/thick against the grain.
Step 3
Slice the onion into half-rings, and cut the bell and chili peppers into strips.
Step 4
If desired, you can make the tortillas yourself, but I use store-bought ones — heating them in the microwave beforehand.
Step 5
In a hot (preferably cast iron) skillet, greased with fat or lard, lay out the beef so that it covers the skillet in a single layer. Then generously sprinkle with freshly ground pepper and sauté for 5 minutes, stirring well.
Step 6
Next, add the onion and peppers, mix thoroughly in the skillet, and remove the skillet from the heat.
Step 7
Now it's time to serve. Fajitas are usually served directly in the skillet with the tortillas on the side. Take a tortilla, fill it with meat and vegetables, top with grated cheese, sour cream, guacamole, and salsa to taste — and... enjoy your meal!
