Beef tenderloin stuffed with cherries
Ingredients
- Dijon Mustard - 1 tablespoon
- Orange zest - 1 teaspoon
- Veal Tenderloin - 15 lbs
- Butter - 2 tablespoons
- Onion - 8.5 oz
- Ground dried cherries - 7.1 oz
- Parsley - ½ bunch
- Ground Black Pepper - to taste
- Red Grape Juice - 2 tablespoons
- Chicken Egg - 1 piece
Step by Step guide
Step 1
Melt one tablespoon of butter in a skillet over medium heat. Add finely chopped onion and sauté until soft. Remove from heat and add cherries, orange zest, lightly beaten egg, parsley, and wine. Mix well and set aside.
Step 2
Make a deep longitudinal cut in the meat, not cutting all the way through. Open it like a book and rub with mustard and black pepper to taste. Spread the cherry mixture on one half of the meat and cover with the other half. Secure the edges with string.
Step 3
Melt the remaining butter in a skillet over medium heat. Place the meat in and brown on all sides, then transfer to a baking sheet.
Step 4
Preheat the oven to 392°F and bake for 25-30 minutes. Remove from the oven and wrap in foil. Let rest for 30 minutes, slice into 6 portions, and serve.
