Beef Tenderloin with Blue Cheese Sauce

Ingredients

  • Butter - 2 tablespoons
  • Dijon Mustard - 1 teaspoon
  • Brandy - 1 teaspoon
  • Danish Blue Cheese - 4 tablespoons
  • Lean Beef - 21.2 oz
  • Chopped Sage Leaves - 4 teaspoons
  • Ocean salt - to taste
  • Ground Black Pepper - to taste
  • Vegetable Oil - 2 teaspoons

Step by Step guide

Step 1

Prepare the sauce. Mix softened butter, mustard, and brandy. Then fold in the blue cheese. Season with salt and pepper to taste. Cover and refrigerate.

Step 2

Prepare the beef. Form 2 oval patties. Sprinkle each with 2 teaspoons of parsley and season with salt and pepper.

Step 3

Gently press the patties with the flat side of a knife, flip them over, and sprinkle the other side with parsley, seasoning with salt and pepper.

Step 4

In a large skillet over medium heat, heat the vegetable oil. Place the patties in the skillet and cook for 6-7 minutes on each side. Transfer the patties to plates and serve with the sauce. Enjoy your meal!
