- Veal Tenderloin - 2 lbs
- Olive Oil - 2 tablespoons
- Salt - to taste
- Dijon Mustard - 3 tablespoons
- Green peppercorns - 3 tablespoons
- Dried Rosemary - 2 tablespoons
- Thyme - 2 tablespoons
- Sour Cream - 1 jar
- Horseradish Leaves - 1.2 oz

Place the beef on plastic wrap and rub with oil, season with salt, rub with mustard, pepper, rosemary, and thyme. Wrap in plastic wrap and let marinate at room temperature for about 1 hour.

Preheat the oven to 392°F. Place the meat on a baking sheet lined with parchment paper and bake for about 35 minutes.
