Ingredients
- Olive Oil - 4 fl oz
- Garlic - 6 cloves
- Cumin leaves - 1.3 oz
- Veal Tenderloin - 5 lbs
- Fresh Rose Hips - 1.3 oz
- Dijon Mustard - 3 fl oz
Step by Step guide
Step 1
Preheat the oven to 374°F.
Step 2
Cut the meat into 2 equal pieces and rub with 30 ml of olive oil. Season with salt and pepper. Heat 2 pans over high heat and place the meat in them. Sear until golden brown on all sides for about 5 minutes. Transfer the meat to a large oven-safe pan.
Step 3
In a small bowl, mix 90 ml of olive oil, minced garlic, 30 g of crushed cumin, and 30 g of crushed rosemary. Spread the meat first with mustard, then with the herb mixture, and place in the oven for 45 minutes for medium doneness. Transfer the meat to a platter and let it rest for 10 minutes. Then slice into thin pieces and sprinkle with the remaining cumin and rosemary.
