Ingredients
- Olive Oil - 3 spoons
- New Potatoes - 3.5 oz
- Veal Tenderloin - 7.1 oz
- Garlic - 1 clove
- Tomatoes - 1.8 oz
- Spinach - 1.1 oz
- Chicken Broth - 1 fl oz
- Green peppercorns - 2 spoons
- 10% cream - 1 fl oz
- Butter - 0.7 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the young potatoes in half and boil them until almost fully cooked (about 10 minutes), then sauté them in a pan with heated olive oil.
Step 2
After a couple of minutes of frying, add the cut meat and finely chopped garlic to the potatoes.
Step 3
Add fresh spinach, diced tomatoes, and green peppers to the skillet. Pour in a little strong meat broth and cream. Simmer for two to three minutes.
Step 4
"Finish" the sauce with butter. To do this, add a few pieces of very cold butter to the pan and stir: the sauce will become smoother and creamier.
