Ingredients
- Beef tongue - 3 lbs
- Parsley - 2.8 oz
- Carrot - 5.3 oz
- Celery salt - 1.8 oz
- Onion - 1.8 oz
- Butter - 1.4 oz
- Wheat Flour - 1.1 oz
- Red Grape Juice - 3 fl oz
- Chicken Broth - 7 fl oz
- Sugar - 1.2 oz
- Raisins - 1.4 oz
- Chopped almonds - 1.1 oz
- Lemon - 1 piece
- Salt - to taste
Step by Step guide
Step 1
Wash the tongue, place it in hot broth, and boil. Cool in cold water, remove the skin starting from the base, and slice diagonally into thin pieces.
Step 2
Toast the flour with butter, dilute with cold broth, add wine, then add washed raisins, blanched, peeled, and sliced almonds, and season to taste with lemon juice and salt. Place the tongue in the prepared sauce and bring to a boil.
Step 3
Serve on a plate, drizzle with sauce, and accompany with dumplings.
