Ingredients
- Veal Tenderloin - 2 lbs
- Garlic - 2 cloves
- Bay leaf - 2 pieces
- Onion - 1 head
- Cilantro - 2.5 oz
- Tomatoes - 3 pieces
- Avocado - 1 piece
- Paprika - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a pot over high heat, bring the beef, crushed garlic, bay leaves, sliced onion, salt, and 6 cups of water to a boil. Then simmer on low heat for about 3 hours.
Step 2
Remove the pot from heat and let the beef cool. Place the beef tenderloin on a cutting board, chop finely, and transfer to a bowl.
Step 3
Mix the cubed cheese, lime juice, cilantro, chipotle peppers, chopped shallots, and finely chopped tomatoes. Season with salt and pepper. Remove the pit from the avocado and slice it.
Step 4
Spread the mixture on a corn tortilla, season with paprika, and serve with avocado slices. Enjoy your meal!
