Description
Plums provide a fresh sweet-and-sour flavor and help the meat achieve the desired tenderness. It's a festive dish that has made it into our collection 'Menu for a Celebration.'
Ingredients
- Beef chuck roast - 4 lbs
- Plums - 2 lbs
- Onion - 2 lbs
- Vegetable Oil - 1 fl oz
- Ground Black Pepper - to taste
- Salt - to taste
- Black Cumin (Cumin) - to taste
- Dry White Wine - to taste
Step by Step guide
Step 1
First, cut each onion into quarters, and then separate the quarters into individual petals.
Step 2
Sear the beef brisket on both sides in vegetable oil, then transfer it to a deep baking dish.
Step 3
Sauté the onion in vegetable oil until it reaches a light caramel color and the petals glisten with moisture.
Step 4
Cover the beef with sautéed onions, season with ground pepper, salt, and a pinch of cumin. Arrange plums around it, cover the baking tray with foil, and place it in an oven preheated to 320°F for about 3 hours.
Step 5
Check a couple of times to make sure there's liquid in the pan and that the meat and onions aren't burning. If something seems off, you can splash in some wine — or you can do it without checking; it won't make things worse.
