Ingredients
- Yellow Beets - 2 pieces
- Mustard Greens - 2 bunches
- Red Wine Vinegar - 2 teaspoons
- Chinese green beans - 1.8 oz
- Olive Oil - 1 tablespoon
- Garlic - 1 clove
- Capers - 2 teaspoons
- Goat cheese - 1.8 oz
Step by Step guide
Step 1
In a jar, place the minced garlic, capers, and add vinegar and oil, season with salt and pepper. Close the lid and shake well.

Arrange the beets, beet greens, and green beans on 2 plates. Top with crumbled cheese and drizzle with the dressing.
Step 3
Wash the beets and beet greens under cold water. Bring water to a boil in a pot, add the beets, reduce the heat, and cook covered for 30 minutes until tender. Drain and cool. Peel the beets and cut into small pieces.
Step 4
Meanwhile, bring salted water to a boil in a pot, add the cut green beans and cook until tender for about 2-3 minutes. Rinse under cold water and dry well.
Step 5
In the pot of boiling water, add the beet greens and cook for 3-5 minutes until tender. Drain and rinse under cold water, then dry well.
