Step 1
For the dressing: whisk together the mustard, honey, oil, soy sauce, and fresh lemon juice.
Step 2
Roast the beetroot in the oven wrapped in foil at 356°F for 1.5 hours. Cool, peel, and cut into cubes.
Step 3
Mix the beetroot with the chard, add 25 grams of the dressing, and stir. Plate the salad, garnish with tofu cubes, and drizzle with the remaining dressing.
