Ingredients
- Spaghetti - 3.5 oz
- Beetroot - 1 piece
- Goat cheese - 1.4 oz
- Semi-soft cream cheese - 2 tablespoons
- Garlic - 2 cloves
- Walnuts - 1.1 oz
- Salt - to taste
Step by Step guide
Step 1
Wash the beetroot, wrap it in foil, and bake in the oven for about 40–50 minutes at 356°F. Once cooked, peel the beetroot and grate it finely.
Step 2
Cook the pasta according to the package instructions. Drain in a colander. Reserve half a cup of the water used to cook the pasta.
Step 3
Heat a pan with a small amount of olive oil. Press the garlic directly into the heated pan, then add the beetroot and soft cream cheese, season with salt, and mix well until the cheese melts. Add a little of the reserved pasta water; the sauce should not be too thick. Add the pasta to the sauce, mix, sprinkle with grated goat cheese, mix again well, allowing the cheese to melt and the sauce to coat the pasta evenly. If necessary, add a bit more water.
Step 4
Serve the pasta on plates, topped with grated goat cheese and walnuts.
